Step-by-Step Instructions for Lemon Rice
  1. Rinse the rice under cold running water until the water becomes clear. Drain well in a fine-mesh strainer.
  2. In a large pot, pour in 3 cups of water and bring it to a vigorous boil over high heat.
  3. Stir in 4 tablespoons of butter and ½ teaspoon of salt into the boiling water. Add the zest and juice of 1 lemon, along with ⅛ teaspoon of turmeric if using.
  4. Carefully add the rinsed basmati rice to the pot, stir briefly. Cover and reduce heat to low, simmer for 18-20 minutes.
  5. Remove from heat, let sit covered for 5 minutes. Fluff the rice with a fork and sprinkle with chopped parsley before serving.
