Ingredients
  

For the Salad
  • 1 large head Broccoli cut into florets
  • 1 medium Red Onion optional, adds sweetness
  • 3 tablespoons Extra-Virgin Olive Oil
  • 1 whole Lemon zested and juiced
  • 1 clove Garlic finely minced
  • ½ teaspoon Sea Salt to taste
  • ¼ teaspoon Black Pepper freshly ground
For the Topping
  • cup Parmesan Cheese shaved, for vegan substitute use plant-based hard cheese
  • 2 tablespoons Toasted Pine Nuts or Slivered Almonds, optional
  • Fresh Parsley optional, chopped for garnish

Method
 

Cooking Instructions
  1. Preheat your oven to 425°F or air fryer to 400°F.
  2. Cut the broccoli into bite-sized florets and toss with olive oil, half of the lemon zest, sea salt, and black pepper in a bowl.
  3. Spread broccoli in a single layer on a baking sheet or air fryer basket. Roast or air-fry for 12–15 minutes, turning halfway.
  4. If using red onion, add it to the baking sheet or air fryer during the last 5 minutes of cooking.
  5. In a large bowl, whisk remaining olive oil, minced garlic, lemon juice, and remaining lemon zest.
  6. Once broccoli (and onion, if used) is finished roasting, mix with the dressing in the bowl.
  7. Transfer to a serving platter, topping with Parmesan cheese, pine nuts or almonds, and parsley.
