  • 2 cups shredded chicken Use leftover rotisserie chicken
  • 8 oz cream cheese Mascarpone is a lighter substitute if desired
  • 1 cup diced sausage Optional; swap for shrimp or leave out
  • 1/2 cup green onions Chives or shallots can be substitutes
  • 1 cup cheddar cheese Monterey Jack or Pepper Jack works too
  • 2 tbsp hot sauce Adjust based on spice preference
  • 2 tbsp cajun seasoning Make your own with paprika, thyme, and cayenne
For Assembly
  • 10 pieces egg roll wrappers Spring roll wrappers are a thinner alternative
For Frying
  • 2 cups vegetable oil Canola or peanut oil recommended

Method
 

Preparation Steps
  1. In a large mixing bowl, combine shredded chicken, cream cheese, and diced sausage (if using). Add chopped green onions, grated cheddar cheese, hot sauce, and Cajun seasoning. Blend until creamy.
  2. Lay an egg roll wrapper in a diamond shape. Spoon 2 tablespoons of filling and fold the corner over the filling, tucking sides and rolling up tightly. Seal edges with beaten egg.
  3. Heat vegetable oil in a skillet to 350°F (175°C). Watch until the oil shimmers.
  4. Fry 3 to 4 egg rolls for 3-4 minutes, turning occasionally until golden brown. Remove and drain on paper towels.
  5. Serve hot on a platter with your favorite dipping sauces.
