- In a large mixing bowl, combine shredded chicken, cream cheese, and diced sausage (if using). Add chopped green onions, grated cheddar cheese, hot sauce, and Cajun seasoning. Blend until creamy.
- Lay an egg roll wrapper in a diamond shape. Spoon 2 tablespoons of filling and fold the corner over the filling, tucking sides and rolling up tightly. Seal edges with beaten egg.
- Heat vegetable oil in a skillet to 350°F (175°C). Watch until the oil shimmers.
- Fry 3 to 4 egg rolls for 3-4 minutes, turning occasionally until golden brown. Remove and drain on paper towels.
- Serve hot on a platter with your favorite dipping sauces.
