Preparation Steps
  1. Begin by cooking the rice noodles according to package instructions, about 8-10 minutes, then drain and rinse under cold water. Set aside to cool.
  2. Thinly slice the carrots and cucumbers into matchsticks. Chop the mint and cilantro.
  3. In a separate bowl, whisk together lime juice, fish sauce, minced garlic, and optional chili until well combined.
  4. In a large mixing bowl, toss the cooled rice noodles with the chopped vegetables, herbs, and crushed peanuts.
  5. Pour the dressing over the noodle mixture and toss gently to coat.
  6. Serve immediately or refrigerate to let flavors meld, keeping dressing separate until serving.
