Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Prepare the vegetables by combining cauliflower, carrots, bell pepper, and onion in a bowl with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast the vegetables for about 25 minutes, stirring halfway through.
  4. In a pan, heat olive oil or butter, add minced garlic and optional red pepper flakes, sauté for 1 minute.
  5. Add sun-dried tomatoes, followed by heavy cream and vegetable broth; simmer for 3 minutes until thickened.
  6. Stir in Parmesan, herb blend, and balsamic vinegar until melted and combined; adjust seasoning as needed.
  7. Toss roasted vegetables into the sauce and simmer for 2 minutes.
  8. Finish with fresh basil before serving.
