Ingredients

  • 2 cups sweet potatoes, diced Garnet or Jewel varieties recommended
  • 6 large eggs large, for protein
  • 1 cup milk any milk or dairy alternative
For the Flavor
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup turkey sausage, cooked can substitute with ground beef or omit
  • 1 medium onion, diced
  • 1 medium green pepper, diced can substitute with bell pepper or spinach
  • 2 cloves garlic, minced use fresh for best flavor
  • 1 teaspoon fresh thyme or dried thyme if not available
For Cooking
  • 2 tablespoons avocado oil can substitute with olive oil

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Chop the sweet potatoes, onion, and green pepper into uniform 1-inch cubes.
  3. Grease a 9x13-inch casserole dish with avocado oil.
  4. In a large skillet, heat avocado oil over medium heat and sauté onions, green pepper, and sweet potatoes for 8-9 minutes.
  5. Spread the sautéed sweet potato and vegetable mixture evenly in the greased casserole dish.
  6. In the same skillet, cook turkey sausage over medium heat until browned, about 5-7 minutes.
  7. Combine the browned turkey sausage with the vegetable mixture in the casserole dish.
  8. In a mixing bowl, whisk together eggs, milk, thyme, salt, pepper, and shredded cheese.
  9. Pour the egg mixture evenly over the vegetable and sausage combination and stir gently.
  10. Bake in the preheated oven for 40-45 minutes or until the center is firm.
  11. Allow the casserole to cool for 5-10 minutes before slicing.
