Ingredients

For the Beef Filling
  • 1 pound Lean Ground Beef Swap for turkey or plant-based meat for lighter options.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Taco Shell
  • 4 pieces Flour Tortillas (6 inches) Corn or gluten-free tortillas are great alternatives.
For Frying
  • 1 tablespoon Neutral Oil Can use canola, avocado, or vegetable oil.
For Toppings
  • 4 slices American Cheese Feel free to use cheddar or a vegan cheese alternative.
  • 1 small Diced Onion Green onions are a milder option.
  • 1 cup Dill Pickle Chips
  • 1 cup Shredded Iceberg Lettuce

Equipment

  • non-stick skillet
  • spatula

Method

Step-by-Step Instructions
  1. Prepare the Beef: Divide the lean ground beef into four equal portions, gently rolling each into a ball. Keep the beef cold until you're ready to use it.
  2. Assemble the Tacos: Take a flour tortilla and place one beef ball in the center. Press down firmly to flatten the beef.
  3. Heat the Skillet: Preheat a non-stick or cast-iron skillet over medium-high heat for about 2 minutes. Add oil and swirl to coat.
  4. Sear the Tacos: Place the tortilla with the meat side down in the skillet. Press for about 2-3 minutes until browned and crispy.
  5. Add Cheese: Flip the taco and place a slice of cheese on top of the meat. Cook until the cheese melts, about 1-2 minutes.
  6. Finish the Tacos: Remove from skillet and top with diced onion, dill pickle chips, and lettuce.
  7. Serve Hot: Serve immediately while hot and crispy, repeating for remaining beef and tortillas.
