Step‑by‑Step Instructions
  1. Preheat your oven to 180°C (350°F).
  2. Grease an 8-inch square baking pan and line it with parchment paper.
  3. In a large mixing bowl, combine the grated zucchini and carrots.
  4. Add the finely chopped onion and minced garlic to the vegetable mixture and stir well.
  5. In a separate bowl, whisk together the eggs, olive oil, and grated cheddar cheese until smooth.
  6. Pour the egg mixture over the veggie mix, stirring thoroughly.
  7. Gradually fold in the self-raising flour and season with salt and pepper to taste.
  8. Spread the batter evenly into your prepared baking pan and smooth the top.
  9. Place the pan in the preheated oven and bake for 30–35 minutes.
  10. Once baked, remove from the oven and let it cool slightly before slicing.
