Step-by-Step Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Heat a splash of olive oil in a skillet over medium heat and sauté chopped fresh spinach for 3-4 minutes until wilted. Allow it to cool slightly and mix with ricotta, Parmesan, garlic powder, salt, and pepper.
- On a lightly floured surface, unfold thawed puff pastry sheets and cut into 4-6 equal squares.
- Spoon 1-2 tablespoons of the filling into the center of each pastry square and fold over to seal, using a fork to crimp edges.
- Whisk the egg and brush the tops of each filled pastry for a golden finish.
- Bake the pastries in the preheated oven for 20-25 minutes until golden brown.
- Let the pastries cool for about 5 minutes before serving with tzatziki or marinara sauce for dipping.

These pastries are best when fresh but can be stored at room temperature for no more than 1 hour or in an airtight container in the fridge for up to 2 days. To maintain crispiness, reheat in the oven.
