Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Heat a splash of olive oil in a skillet over medium heat and sauté chopped fresh spinach for 3-4 minutes until wilted. Allow it to cool slightly and mix with ricotta, Parmesan, garlic powder, salt, and pepper.
  3. On a lightly floured surface, unfold thawed puff pastry sheets and cut into 4-6 equal squares.
  4. Spoon 1-2 tablespoons of the filling into the center of each pastry square and fold over to seal, using a fork to crimp edges.
  5. Whisk the egg and brush the tops of each filled pastry for a golden finish.
  6. Bake the pastries in the preheated oven for 20-25 minutes until golden brown.
