Cooking Steps
- Preheat your oven to 300°F (150°C).
- Season the beef short ribs with sea salt and black pepper on all sides, and let rest for 10 minutes.
- In a pot, heat olive oil over medium-high heat and sear the ribs for 4 minutes on each side.
- Remove ribs, add diced onion to the pot and sauté for 5 minutes until translucent.
- Stir in the minced garlic and sauté for 1 minute until fragrant.
- Pour in beef stock, bourbon, maple syrup, tamari, vinegar, mustard, and optional red pepper flakes and stir well.
- Return seared ribs to pot and ensure they are submerged in the sauce.
- Cover and braise in oven for 2.5 to 3 hours until tender.
- Let ribs rest for 10 minutes after removing from oven and skim off excess fat before serving.
