For the Ribs
  • 3 lbs Beef short ribs Can substitute with pork ribs.

  • 1 cup Yellow onion Diced.
  • 4 cloves Garlic Minced.
  • 2 cups Beef stock Low-sodium recommended.
  • 1 cup Bourbon whiskey Can substitute with apple juice or vinegar.
  • 1/2 cup Pure maple syrup Essential for glaze.
  • 1/4 cup Tamari sauce Gluten-free soy sauce alternative.
  • 1 tbsp Apple cider vinegar Provides acidity.
  • 1 tbsp Whole grain mustard Can substitute with Dijon.
  • 1/2 tsp Crushed red pepper flakes Optional.

Method
 

Cooking Steps
  1. Preheat your oven to 300°F (150°C).
  2. Season the beef short ribs with sea salt and black pepper on all sides, and let rest for 10 minutes.
  3. In a pot, heat olive oil over medium-high heat and sear the ribs for 4 minutes on each side.
  4. Remove ribs, add diced onion to the pot and sauté for 5 minutes until translucent.
  5. Stir in the minced garlic and sauté for 1 minute until fragrant.
  6. Pour in beef stock, bourbon, maple syrup, tamari, vinegar, mustard, and optional red pepper flakes and stir well.
  7. Return seared ribs to pot and ensure they are submerged in the sauce.
  8. Cover and braise in oven for 2.5 to 3 hours until tender.
  9. Let ribs rest for 10 minutes after removing from oven and skim off excess fat before serving.
