  • 1 cup bell peppers any variety, sliced
  • 2 cups spinach fresh
For the Sauce
  • 3 tbsp soy sauce low-sodium recommended
  • 2 tbsp sesame oil or olive oil
For Garnish
  • 2 tbsp green onions chopped

Step-by-Step Instructions for Japchae
  1. Soak sweet potato glass noodles in hot water for 20-30 minutes until soft and translucent.
  2. Heat oil in a skillet. Stir-fry sliced beef for 3-5 minutes until browned and cooked. Set aside.
  3. In the same skillet, stir-fry sliced vegetables for 3-4 minutes until tender-crisp.
  4. Return cooked noodles and protein to the skillet, toss to combine everything evenly.
  5. Add soy sauce and sesame oil, stir well and cook for an additional 2-3 minutes.
  6. Garnish with chopped green onions and serve hot or at room temperature.
