Step-by-Step Instructions
  1. Melt 1 tablespoon of butter in a large skillet over medium heat. Season shrimp with salt and pepper, then add to the pan. Sear for 2 minutes each side until pink and opaque. Remove and set aside.
  2. In the same skillet, add another tablespoon of butter. Add zucchini and roasted peppers, sauté for 5-6 minutes until tender-crisp. Stir in minced garlic and optional Cajun seasoning for 30 seconds.
  3. Pour in white wine or chicken broth to deglaze the skillet, scraping up bits stuck to the bottom. Allow to simmer for 1-2 minutes. Stir in heavy cream or coconut milk, simmer for 3-4 minutes until thickened.
  4. Return the seared shrimp to skillet, gently coating in the creamy sauce. Simmer for another 2 minutes to heat through.
  5. Adjust seasoning with salt and pepper as needed. Garnish with chopped herbs and serve immediately over cauliflower rice or with crusty bread.
