  • 12 small Corn Tortillas or flour/gluten-free tortillas
  • 2 cups Shredded Cheese Cheddar or Mexican Blend; or try pepper jack
  • 2 teaspoons Chili Powder
  • 1 teaspoon Cumin
  • to taste Salt
  • to taste Pepper
  • 1/4 cup Fresh Cilantro optional; or use parsley as a substitute

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather your tools: a large skillet and a 9x13-inch baking dish.
  2. In the large skillet, cook the ground beef over medium heat for about 5-7 minutes, breaking it apart until browned. Add chopped onion and minced garlic; sauté until onion is translucent and fragrant, about 5 minutes.
  3. Stir in the chili powder, cumin, salt, and pepper; cook for an additional 2-3 minutes until well-seasoned.
  4. Add black beans and red enchilada sauce to the skillet. Stir thoroughly and simmer for about 5 minutes until heated through and slightly thickened.
  5. Cut the corn tortillas in half to facilitate layering.
  6. In the greased baking dish, layer half of the beef mixture, followed by tortilla halves, then sprinkle cheese. Repeat the layers finishing with cheese on top.
  7. Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until cheese is bubbly.
  8. Allow the casserole to cool for 5-10 minutes, then garnish with fresh cilantro before serving.
