Method
 

Step-by-Step Instructions
  1. Season pork with salt and pepper. Heat oil in a skillet over medium-high heat, and sear the pork for 5-7 minutes until browned.
  2. Add apple cider to skillet, reduce heat, cover, and simmer for about 20 minutes, turning pork occasionally.
  3. Meanwhile, boil peeled and chopped sweet potatoes for 15-20 minutes until fork-tender. Drain and return to pot.
  4. Mash sweet potatoes with butter and milk until creamy. Season with salt and pepper.
  5. Plate pork beside mashed sweet potatoes, drizzle with remaining apple cider sauce, and serve warm.
