  • 2 medium Sweet Potatoes or butternut squash for variation
  • 2 tablespoons Olive Oil for roasting
  • to taste Salt for seasoning
  • to taste Pepper for seasoning
For the Toppings
  • 8 ounces Brie Cheese or camembert/goat cheese
  • 1 cup Dried Cherries or dried cranberries/apricots
  • 1/2 cup Toasted Walnuts or pecans/sliced almonds

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes, then cut them into uniform half-inch thick rounds.
  3. Pat the sweet potato slices dry, brush both sides with olive oil, and season with salt and pepper.
  4. Arrange the sweet potato rounds in a single layer on a baking sheet and roast for 20-25 minutes, flipping halfway through.
  5. Toast the walnuts in the oven at 350°F (175°C) for 5-8 minutes, keeping a close eye on them.
  6. Once the rounds are done, let them cool briefly, then top each with brie, dried cherries, and toasted walnuts.
  7. Serve warm on a platter and enjoy!
