- In a medium mixing bowl, combine cottage cheese, dill or parsley, and lemon juice. Season with salt and pepper to taste. Mix until smooth and creamy.
- Take your chosen wraps and lay them flat. Spread the cottage cheese mixture across each wrap, leaving about an inch from the edges.
- Slice the cucumber into thin rounds or julienne strips. Scatter cucumber slices and any additional veggies across each wrap.
- Roll each wrap from the edge closest to you, tucking in the sides as you go. Ensure they’re tight yet not overly squished.
- Slice each wrap in half diagonally for easy handling. Enjoy immediately or wrap in plastic and store in the fridge for up to 24 hours.
