Instructions
  1. Squeeze the juice from three mandarin oranges until you have about three tablespoons of fresh juice.

  3. Let the mixture sit for about five minutes to allow the chia seeds to absorb the liquid and thicken.
  4. Stir the mixture again to break up any clumps and ensure an even texture.
  5. Seal the mason jar and refrigerate for at least two hours or overnight until the pudding is thick.
  6. When ready to serve, stir the pudding and top with Greek yogurt and mandarin orange slices.
