Step-by-Step Instructions
  1. Preheat your oven to 300°F (150°C).
  2. In your Dutch oven, heat a tablespoon of olive oil over medium-high heat. Add the diced onion and sauté for about 5 minutes until translucent. Stir in minced garlic, cooking for an additional minute.
  3. Season your chuck roast with salt, black pepper, and smoked paprika. Sear each side for about 4-5 minutes until browned.
  4. Pour in beef broth, barbecue sauce, Worcestershire sauce, and sprinkle brown sugar. Bring it to a simmer.
  5. Cover the Dutch oven and transfer to the oven. Cook for 3-4 hours until fork-tender.
  6. Remove from the oven and let cool slightly. Shred the beef in the pot and mix with the sauce.
  7. Optionally toast your buns under the broiler for 1-2 minutes until golden brown.
  8. Assemble the sandwich by piling shredded beef onto each bun and adding coleslaw if desired.
