Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Grease each cup of the mini muffin pan with cooking spray or olive oil.
  3. Place a slice of pepperoni in each muffin cup, pressing it down to form a cup shape.
  4. In a bowl, mix the shredded mozzarella and grated parmesan cheese. Add Italian seasoning if using.
  5. Spoon a small amount of the cheese mixture into each pepperoni cup.
  6. If desired, add a small dot of low sugar pizza sauce on top of the cheese.
  7. Bake in the preheated oven for 10-12 minutes until cheese is bubbly and lightly golden.
  8. Allow to cool for about 5 minutes before removing from the pan.
