- Preheat your oven to 400°F (200°C).
- Grease each cup of the mini muffin pan with cooking spray or olive oil.
- Place a slice of pepperoni in each muffin cup, pressing it down to form a cup shape.
- In a bowl, mix the shredded mozzarella and grated parmesan cheese. Add Italian seasoning if using.
- Spoon a small amount of the cheese mixture into each pepperoni cup.
- If desired, add a small dot of low sugar pizza sauce on top of the cheese.
- Bake in the preheated oven for 10-12 minutes until cheese is bubbly and lightly golden.
- Allow to cool for about 5 minutes before removing from the pan.
