- In a large mixing bowl, combine the ground chicken, mayonnaise, Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix gently until just combined.
- Divide the mixture into four equal portions, forming loose balls.
- Heat a large skillet over medium-high heat and add cooking oil. Let the oil heat for about 2 minutes.
- Place the chicken balls into the skillet and let them cook for about 1 minute undisturbed.
- Use a spatula to press down on each chicken ball, flattening them to about ½ inch thick. Cook for 3-4 minutes.
- Flip each patty and cook for an additional 3-4 minutes. Add cheese on top during the last minute if desired.
- Toast your hamburger buns in a separate pan with some butter or oil for 2-3 minutes until golden brown.
- Assemble the burgers by placing a cooked patty on the bottom half of each toasted bun. Top with lettuce, tomatoes, and pickles.
- Serve immediately while warm.
