Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Season both sides of the chicken breasts with salt and black pepper.
  3. Heat a large oven-safe skillet over medium-high heat and add olive oil. Sear the chicken for about 3-4 minutes on each side.
  4. Remove the chicken from the skillet and set it aside on a plate.
  5. In the same skillet, sauté diced jalapenos and fresh peaches for 2-3 minutes.
  6. In a small bowl, whisk together honey, apple cider vinegar, water, and cornstarch until smooth.
  7. Pour the glaze mixture over the jalapenos and peaches, stirring to coat evenly. Simmer for 2-3 minutes.
  8. Return the seared chicken to the skillet and spoon the glaze over the top.
  9. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is fully cooked.
