  • 8 ounces Rotini Pasta or gluten-free pasta
  • 6 ounces Pepperoni or turkey/chicken slices
  • 4 ounces Salami omit for vegetarian versions
  • 6 ounces Ham or turkey/chicken deli meats
  • 4 cups Shredded Iceberg Lettuce or arugula
  • 1 cup Red Onions or green onions for milder flavor
  • 1 cup Banana Peppers or sliced jalapeños
  • 1 cup Black Olives omit if not preferred
  • 1 cup Chopped Tomatoes or cherry tomatoes/cucumbers
  • 1 cup Shredded Provolone Cheese or mozzarella/feta
  • 1/2 cup Grated Parmesan Cheese omit for dairy-free version
For the Dressing
  • 1 cup Mayonnaise or Greek yogurt
  • 1/4 cup Red Wine Vinegar or apple cider vinegar
  • 1/4 cup Olive Oil or avocado oil
  • 1 tablespoon Italian Seasoning or a mix of dried herbs
  • to taste Salt & Black Pepper

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add rotini pasta and cook according to package instructions, about 8-10 minutes. Drain and rinse under cold water.
  2. In a large bowl, combine cooled pasta with pepperoni, salami, and ham. Gently fold together.
  3. Stir in the shredded lettuce, diced onions, banana peppers, olives, and tomatoes into the pasta mixture.
  4. In a small bowl, whisk together mayonnaise, red wine vinegar, olive oil, Italian seasoning, salt, and black pepper until smooth.
  5. Pour the dressing over the pasta mixture and toss until everything is evenly coated.
  6. Cover and chill in the refrigerator for at least 30 minutes before serving. Toss again before serving and add herbs if desired.
