Step-by-Step Instructions
- Preheat your oven to 350°F (175°C) and grease an 8.5 x 4.5 inch loaf pan with butter or non-stick spray. Dust it lightly with flour.
- In a medium bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and ½ teaspoon of salt.
- In a large mixing bowl, beat together ½ cup of unsalted butter, 1 cup of granulated sugar, and 1 teaspoon of vanilla extract until light and fluffy.
- Incorporate 2 large eggs, mixing well after each addition until fully incorporated.
- Gradually mix in half of the flour mixture, followed by ½ cup of milk, alternating until everything is combined.
- In a separate bowl, stir together ½ cup of light brown sugar, 1½ teaspoons of ground cinnamon, and 2 cups of peeled, chopped tart apples.
- Pour half of the batter into the prepared loaf pan and layer half of the apple mixture on top.
- Top with the remaining batter, smoothing it out gently, and then sprinkle with the remaining apple mixture.
- Sprinkle 2 tablespoons of brown sugar and 1 teaspoon of cinnamon over the top before baking.
- Bake for 45-55 minutes, checking for doneness by inserting a toothpick in the center.
- Allow the bread to cool in the pan for 15-20 minutes, then transfer to a wire rack to cool completely.
- Drizzle with a simple glaze made from confectioners' sugar mixed with water.
