Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease an 8.5 x 4.5 inch loaf pan with butter or non-stick spray. Dust it lightly with flour.
  2. In a medium bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and ½ teaspoon of salt.
  3. In a large mixing bowl, beat together ½ cup of unsalted butter, 1 cup of granulated sugar, and 1 teaspoon of vanilla extract until light and fluffy.
  4. Incorporate 2 large eggs, mixing well after each addition until fully incorporated.
  5. Gradually mix in half of the flour mixture, followed by ½ cup of milk, alternating until everything is combined.
  6. In a separate bowl, stir together ½ cup of light brown sugar, 1½ teaspoons of ground cinnamon, and 2 cups of peeled, chopped tart apples.
  7. Pour half of the batter into the prepared loaf pan and layer half of the apple mixture on top.
  8. Top with the remaining batter, smoothing it out gently, and then sprinkle with the remaining apple mixture.
  9. Sprinkle 2 tablespoons of brown sugar and 1 teaspoon of cinnamon over the top before baking.
  10. Bake for 45-55 minutes, checking for doneness by inserting a toothpick in the center.
  11. Allow the bread to cool in the pan for 15-20 minutes, then transfer to a wire rack to cool completely.
  12. Drizzle with a simple glaze made from confectioners' sugar mixed with water.
