  • 2 tbsp Fresh lemon juice Freshly squeezed
  • 1 tsp Vanilla extract Pure is preferable
  • 1 pinch Salt To taste
  • 1 cup Unsweetened shredded coconut Optional for coating

Step-by-Step Instructions
  1. In a medium mixing bowl, beat softened cream cheese and unsalted butter until smooth for 2-3 minutes.
  2. Add powdered sweetener, lemon zest, lemon juice, vanilla extract, and salt; mix until fluffy for 2 more minutes.
  3. Cover and chill the mixture in the refrigerator for at least 30 minutes to firm up.
  4. Scoop out 12-15 tablespoons and roll into smooth balls.
  5. If using, roll each ball in unsweetened shredded coconut for coating.
  6. Freeze fat bombs on a parchment-lined tray for 1-2 hours until firm.
  7. Store in an airtight container in the freezer for up to 1 month.
