Method
 

Step‑by‑Step Instructions

  3. Drizzle the sweet potato rounds with olive oil and sprinkle with salt and pepper, tossing to coat.
  4. Roast in the oven for 20-25 minutes, flipping halfway through, until tender and golden.
  5. Top each round with a slice of brie and return to the oven for 5 minutes until melted.
  6. Sprinkle with cranberries and pecans, and add herbs if desired. Serve warm.
