Ingredients
  

For the Roast
  • 3 pounds Beef Chuck Roast Consider brisket for a different taste.
  • 1 tablespoon Kosher Salt Adjust according to dietary needs.
  • 2 tablespoons Vegetable Oil Can be swapped with canola or olive oil.
For the Aromatics
  • 1 medium Sweet Onion Yellow onion is a suitable alternative.
  • 4 cloves Garlic Cloves Fresh is best for authenticity.
  • 1 tablespoon Fresh Ginger Use ground ginger in a pinch.
For the Sauce
  • 2 tablespoons Gochujang Mix of chili sauce and miso makes a good substitute.
  • 2 tablespoons Brown Sugar Honey or maple syrup can work too.
  • 1/4 cup Soy Sauce Opt for low-sodium for a healthier version.
  • 1 cup Beef Broth Vegetable broth makes a great lighter choice.
To Serve
  • 4 cups Cooked Rice Try brown rice or quinoa for added nutrition.
  • 1/4 cup Fresh Cilantro Green onions can be used if desired.
  • 2 cups Kimchi Store-bought or homemade works!

Method
 

Cooking Instructions
  1. Preheat your oven to 300°F (150°C). Gather ingredients and equipment.
  2. In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Sear the beef chuck roast for about 3-4 minutes until golden-brown.
  3. Remove the beef and in the same skillet, sauté a chopped sweet onion, minced garlic cloves, and freshly grated ginger for 4-5 minutes until translucent.
  4. In a mixing bowl, combine gochujang, brown sugar, soy sauce, and beef broth. Stir until smooth.
  5. Transfer the browned beef back into the roasting pan, pour the sauce over it, and cover tightly with aluminum foil. Bake for about 3 to 4 hours.
  6. Once done, let the beef rest for at least 15 minutes before slicing. Serve over cooked rice, garnished with cilantro and kimchi.
