Ingredients
  

For the Meatballs
  • 1 lb Ground Beef can substitute with ground lamb, chicken, or turkey
  • 3 cloves Garlic minced or crushed
  • 2 medium Onions finely minced
  • 2 tbsp Breadcrumbs can use gluten-free breadcrumbs
  • 1 tsp Baking Soda for texture
  • 1 cup Fresh Herbs parsley, mint, coriander
  • 3 tbsp Olive Oil total for meatballs and salad
  • 1.5 tsp Salt
  • Black Pepper to taste
For the Roasted Potatoes
  • 6 medium Potatoes can substitute with sweet potatoes
  • 0.5 tsp Cumin
  • 0.5 tsp Paprika
  • 0.5 tsp Oregano
For the Tzatziki Sauce
  • 1 cup Greek Yogurt can substitute with sour cream
  • 0.5 Cucumber grated and drained
  • 1 tbsp Lemon Juice
  • 0.3 cup Fresh Dill or Mint
For Assembly
  • 2 cups Lettuce chopped
  • 0.5 cup Kalamata Olives optional

Method
 

Step-by-Step Instructions
  1. Prepare the Meatball Mixture by combining ground beef, garlic, onions, breadcrumbs, baking soda, fresh herbs, olive oil, salt, and pepper in a bowl. Refrigerate for 2 hours.
  2. Shape Meatballs into 1.5 inch balls and place on a parchment-lined baking sheet.
  3. Bake the Meatballs at 425°F (220°C) for 30-40 minutes until cooked through.
  4. Roast the Potatoes tossed with olive oil, cumin, paprika, oregano, salt, and pepper for 40-60 minutes until crispy.
  5. Make the Tzatziki Sauce by combining yogurt, cucumber, garlic, dill or mint, lemon juice, olive oil, and a pinch of salt in a bowl.
  6. Assemble the Greek Meatball Bowl with lettuce, roasted potatoes, meatballs, tzatziki sauce, and optional olives.
