  • 2 pieces bay leaves
  • 1 teaspoon smoked paprika
For Seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Method
 

Step-by-Step Instructions
  1. Season the chicken with salt, black pepper, and smoked paprika, then set aside while preparing other ingredients.
  2. Heat olive oil in a pot and sear the chicken skin-side down for 6-8 minutes, then flip and brown the other side for 4-5 minutes. Remove and set aside.
  3. Sauté onion, garlic, and red bell pepper for 5-7 minutes until softened.
  4. Stir in tomato paste, bay leaves, and smoked paprika; cook for 1-2 minutes until aromatic.
  5. Add rice and toast for 1-2 minutes; pour in chicken broth and bring to a simmer.
  6. Nestle browned chicken in the pot, cover, and simmer for 25-30 minutes until rice is tender.
  7. Allow to rest for 5 minutes, garnish with parsley, and serve with lemon wedges.
