- Preheat your oven to 425°F (220°C).
- Wash and dry the potatoes thoroughly. Slice each potato 1/8 inch apart but do not cut all the way through.
- In a small saucepan, combine butter and olive oil over medium heat. Once melted, add minced garlic and cook for 1-2 minutes.
- Brush the garlic butter mixture over each sliced potato and sprinkle with salt and pepper.
- Bake the potatoes for 45 minutes until golden brown.
- Remove from oven, sprinkle breadcrumbs and Parmesan over each potato, and bake for another 15 minutes.
- Once golden and crispy, sprinkle fresh thyme leaves on top just before serving.
- Serve hot alongside your favorite dishes.
