  • 2 tablespoons lime juice Fresh lime juice preferred

  • 2 medium avocados Perfectly ripe are ideal
  • 1 medium cucumber Diced finely
  • 1 small red onion Finely chopped
  • 1 medium tomato Diced
  • 1 medium jalapeño Optional, adjust for spice
  • 0.5 cup fresh cilantro Chopped coarsely
For Seasoning and Garnish
  • 1 tablespoon hot sauce Optional, adjust for heat
  • to taste salt Basic seasoning
  • to taste pepper Basic seasoning
  • 2 wedge lime For serving
  • sprigs cilantro For garnish

Method
 

Preparation
  1. Peel and devein the cooked shrimp, then rinse under cold water.
  2. Dice the avocado, cucumber, and tomatoes into uniform pieces.
  3. Finely chop the red onion and cilantro, then dice the jalapeño if desired.
Cocktail Base
  1. In a medium bowl, combine tomato juice with lime juice, hot sauce, salt, and pepper, mixing well.
Combine Ingredients
  1. In a large bowl, gently toss the shrimp with diced avocado, cucumber, red onion, tomato, jalapeño, and cilantro.
Mix and Chill
  1. Pour the cocktail base over the shrimp and vegetable mixture, gently toss, cover, and refrigerate for 30 minutes.
Serve
  1. Spoon the mixture into clear glasses or bowls, garnish with lime wedges and cilantro sprigs, and serve cold.
