- Preheat your oven to 190°C (375°F).
- In a large mixing bowl, combine crab meat, shrimp, cream cheese, breadcrumbs, mayonnaise, mustard, garlic powder, paprika, and parsley. Season with salt and pepper.
- Place salmon fillets on a cutting board and cut a deep pocket in each fillet. Season with salt and pepper.
- Fill each salmon pocket with stuffing mixture but avoid overstuffing. Secure with toothpicks if needed.
- In an oven-safe skillet, heat olive oil over medium-high heat and sear each side of the salmon for 2-3 minutes until golden.
- Transfer the skillet to the oven and bake for 12-15 minutes until the salmon is flaky.
- Remove from oven, let cool slightly, and serve with lemon wedges.
