  • 2 cloves Garlic Minced.
  • 1 teaspoon Chili Powder Adjust quantity to taste.
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano Preferably Mexican oregano.
  • 1 can Black Beans Rinsed and drained.
  • 1 cup Corn Fresh or frozen.
  • ¼ cup Cilantro Chopped.
  • Salt To taste.
  • Pepper To taste.
For Assembling
  • 8 Tortillas (Corn or Flour) Warm before rolling.
  • 1-2 cups Enchilada Sauce Store-bought or homemade.
  • 1 cup Monterey Jack Cheese Shredded.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Sauté onion for about 5 minutes until translucent.
  3. Stir in garlic, chili powder, cumin, and oregano. Cook for 1 minute.
  4. Add black beans, corn, salt, and pepper to the skillet. Fold in cilantro and cook for 2-3 minutes.
  5. Warm tortillas in a skillet or microwave for about 30 seconds.
  6. Spoon about ⅓ cup of the filling into each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  7. Pour enchilada sauce over the assembled tortillas and top with Monterey Jack cheese.
  8. Bake in preheated oven for 20-25 minutes until bubbling and golden.
  9. Let enchiladas rest for 5 minutes before serving.
