- Preheat your oven to 350°F (175°C).
- Combine pistachios, feta, Parmesan, breadcrumbs, and melted butter in a bowl until it resembles wet sand.
- Press crust mixture into a 9-inch springform pan and bake for about 10 minutes until golden.
- Sauté chopped mushrooms and garlic in olive oil for 5-7 minutes until tender.
- Beat cream cheese until smooth, then add sour cream, eggs, and Parmesan until combined.
- Fold in the sautéed mushrooms and season with salt and pepper.
- Pour the filling over the crust and bake for 35-40 minutes until set.
- Allow to cool in the pan for about 10 minutes before removing and serving.
