  • 1/2 cup Feta Cheese or use goat cheese or ricotta
  • 1/2 cup Parmesan Cheese or sharp cheddar if preferred
  • 1 cup Breadcrumbs use gluten-free for gluten-free option
  • 1/2 cup Melted Butter vegan margarine can be used
Filling Ingredients
  • 2 cups Mushrooms (finely chopped) any type like cremini or button
  • 2 cloves Garlic (minced) fresh garlic recommended
  • 16 ounces Cream Cheese can use Neufchâtel for lighter version
  • 1 cup Sour Cream or Greek yogurt
  • 3 large Eggs or use flax eggs for vegan option
  • to taste Salt
  • to taste Pepper

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. Combine pistachios, feta, Parmesan, breadcrumbs, and melted butter in a bowl until it resembles wet sand.
  3. Press crust mixture into a 9-inch springform pan and bake for about 10 minutes until golden.
  4. Sauté chopped mushrooms and garlic in olive oil for 5-7 minutes until tender.
  5. Beat cream cheese until smooth, then add sour cream, eggs, and Parmesan until combined.
  6. Fold in the sautéed mushrooms and season with salt and pepper.
  7. Pour the filling over the crust and bake for 35-40 minutes until set.
  8. Allow to cool in the pan for about 10 minutes before removing and serving.
