  • 1 cup Old-Fashioned Rolled Oats Quick oats can be used for a softer finish.

  • Dried Fruits (raisins or cranberries).

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a muffin tin.
  2. In a bowl, combine old-fashioned rolled oats with 1 cup of milk and let it soak for 5 to 10 minutes.
  3. Add pure maple syrup, oil, brown sugar, and lightly beaten eggs to the oat mixture and whisk gently.
  4. In a separate bowl, whisk together flour, baking powder, ground cinnamon, baking soda, and kosher salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  6. Fill the muffin tin about three-quarters full with batter and sprinkle raw sugar on top if desired.
  7. Bake in the preheated oven for 18 to 25 minutes until golden brown.
  8. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
