Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, whisk together the eggs, milk, and ground turmeric.
  3. In an oven-safe skillet, heat olive oil over medium heat, add red onions and garlic, sauté for 2-3 minutes.
  4. Add sliced fingerling potatoes to the skillet, stirring gently; cook for 8-10 minutes until tender.
  5. Stir in diced red peppers and cook for an additional 2-3 minutes.
  6. Add fresh baby spinach and sliced scallions, stir until the spinach wilts.
  7. Pour the egg mixture evenly over the vegetables, cook for 2-3 minutes until edges set.
  8. Transfer the skillet to the oven and bake for 15-20 minutes until puffed and golden.
  9. Remove from oven, let cool slightly, slice into wedges, and serve.
