Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with 12 cupcake liners.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, combine the alternative milk, yogurt, oil, egg (or applesauce), and vanilla extract.
