Method
 

Step-by-Step Instructions
  1. If using freshly cooked rice, spread it out on a baking sheet to cool for about 20-30 minutes.
  2. In a large skillet, heat the pan over medium-high heat. Add diced bacon and cook until crispy, about 5-7 minutes.
  3. Remove the bacon with a slotted spoon, leaving the fat in the pan.
  4. Add chopped scallions to the skillet and sauté in bacon fat for 1-2 minutes.
  5. Add the cooked rice to the skillet, breaking up clumps and stir-fry for about 3-5 minutes.
  6. Push rice to one side, pour in beaten eggs, and scramble lightly for 1-2 minutes. Fold into rice.
  7. Drizzle soy sauce over the rice mixture, stir to combine, and add crispy bacon back.
  8. Plate the Breakfast Fried Rice and garnish with scallions or sesame seeds.
