Method

Preparation Steps
  1. In a mixing bowl, whisk together 2 cups of unsweetened almond milk, 1 cup of chia seeds, 1/4 cup of maple syrup, 1 teaspoon of vanilla extract, and a pinch of salt. Allow the mix to sit for 10-15 minutes, stirring occasionally until it thickens.
  2. Heat 2 tablespoons of butter in a saucepan over medium heat. Add 4 cups of diced apples, then sprinkle with 1/4 cup of brown sugar, 1 teaspoon of cinnamon, and a squeeze of lemon juice. Sauté for about 5-7 minutes until the apples are tender.
  3. In a separate bowl, combine 1 cup of rolled oats, 1 cup of all-purpose flour, and 1/4 cup of brown sugar along with 1 teaspoon of cinnamon. Pour in 1/2 cup of melted butter and mix until crumbly.
  4. Preheat your oven to 350°F (175°C). Spread the crumble mixture evenly on a parchment-lined baking sheet and bake for 15-20 minutes, stirring halfway through.
  5. In serving glasses, layer your pudding starting with chia pudding, followed by apple compote, and top with crumble. Repeat until glasses are filled, finishing with crumble on top.
  6. Serve immediately for warm comfort or chill for 1-2 hours to let the flavors meld.
