Preparation Steps
- In a mixing bowl, whisk together 2 cups of unsweetened almond milk, 1 cup of chia seeds, 1/4 cup of maple syrup, 1 teaspoon of vanilla extract, and a pinch of salt. Allow the mix to sit for 10-15 minutes, stirring occasionally until it thickens.
- Heat 2 tablespoons of butter in a saucepan over medium heat. Add 4 cups of diced apples, then sprinkle with 1/4 cup of brown sugar, 1 teaspoon of cinnamon, and a squeeze of lemon juice. Sauté for about 5-7 minutes until the apples are tender.
- In a separate bowl, combine 1 cup of rolled oats, 1 cup of all-purpose flour, and 1/4 cup of brown sugar along with 1 teaspoon of cinnamon. Pour in 1/2 cup of melted butter and mix until crumbly.
- Preheat your oven to 350°F (175°C). Spread the crumble mixture evenly on a parchment-lined baking sheet and bake for 15-20 minutes, stirring halfway through.
- In serving glasses, layer your pudding starting with chia pudding, followed by apple compote, and top with crumble. Repeat until glasses are filled, finishing with crumble on top.
- Serve immediately for warm comfort or chill for 1-2 hours to let the flavors meld.
