Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and prepare your rectangular baking dish (20x30cm) by greasing it with butter and lining it with parchment paper.
  2. Chop the pitted dates and place them in a mixing bowl. Pour the boiling water over the chopped dates, then add the baking soda. Let them soak for 10 to 15 minutes.
  3. Cream the softened unsalted butter with the brown sugar using an electric mixer on medium speed until light and fluffy, about 3-5 minutes.
  4. Beat in the large eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Sift together the all-purpose flour, baking powder, and salt. Gradually fold these dry ingredients into the wet mixture.
  6. Gently fold in the soaked dates along with their soaking liquid into the batter.
  7. Pour the batter into the greased baking dish and spread it evenly. Bake for 30 to 35 minutes until a skewer comes out clean.
