Step-by-Step Instructions
- Preheat your oven to 180°C (350°F) and prepare your rectangular baking dish (20x30cm) by greasing it with butter and lining it with parchment paper.
- Chop the pitted dates and place them in a mixing bowl. Pour the boiling water over the chopped dates, then add the baking soda. Let them soak for 10 to 15 minutes.
- Cream the softened unsalted butter with the brown sugar using an electric mixer on medium speed until light and fluffy, about 3-5 minutes.
- Beat in the large eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Sift together the all-purpose flour, baking powder, and salt. Gradually fold these dry ingredients into the wet mixture.
- Gently fold in the soaked dates along with their soaking liquid into the batter.
- Pour the batter into the greased baking dish and spread it evenly. Bake for 30 to 35 minutes until a skewer comes out clean.
- Combine the brown sugar, unsalted butter, and heavy cream in a saucepan over medium heat. Stir until the butter melts and the mixture simmers, about 5 minutes.
- Allow the pudding to cool in the dish for about 10 minutes, cut into squares, and serve warm with the toffee sauce.
