  • 0.25 cup Fresh Parsley chopped
For the Creamy Dressing
  • 0.5 cup Plain Greek Yogurt can use low-fat or dairy-free alternatives
  • 2 tablespoons Mayonnaise use vegan mayo for plant-based version
  • 1 cup Orange Juice freshly squeezed
  • 0.5 cup Lemon Juice freshly squeezed
  • 2 tablespoons Honey can substitute with agave syrup

Method
 

Step-by-Step Instructions
  1. Peel and grate approximately two large carrots into a large mixing bowl.
  2. Core and dice two apples into small cubes and add them immediately into the mixing bowl.
  3. Finely shred about a cup of red cabbage and add it along with half a cup of dried cranberries and a handful of chopped nuts.
  4. Whisk together 0.5 cup of plain Greek yogurt, 2 tablespoons of mayonnaise, the juice of one orange, and the juice of half a lemon in a separate bowl.
  5. Pour the creamy dressing over the salad mixture and gently toss everything together using salad tongs.
  6. Taste the salad and adjust seasoning as necessary with more salt, pepper, or lemon juice.
  7. Chill the salad in the refrigerator for about 15 minutes before serving.
  8. Serve chilled or at room temperature, garnished with extra nuts or parsley.
