Ingredients

For the Casserole
  • 1 package Mrs. T’s Cheddar Pierogies Use frozen for a quick base
  • 1 pound Kielbasa Choose smoked for rich flavor; turkey kielbasa works for a lighter dish
  • 3-4 cups Chicken Broth Opt for low-sodium varieties
  • 2 cups Shredded Cheddar Cheese Set some aside for topping
  • 8 ounces Cream Cheese Softened for smooth mixing
  • to taste Salt Essential for seasoning
  • to taste Pepper Essential for seasoning
For Serving
  • 1/2 cup Sliced Green Onions Great for garnish
  • 1 cup Sour Cream For a creamy topping

Equipment

  • 4-6 quart crockpot

Method

Step-by-Step Instructions
  1. In a 4-6 quart crockpot, add the frozen Mrs. T’s Cheddar Pierogies and sliced smoked kielbasa. Pour in enough low-sodium chicken broth to almost cover the ingredients, about 3-4 cups. Stir gently to combine.
  2. Season the mixture generously with salt and pepper to taste, stirring to evenly distribute the seasoning throughout.
  3. Cover the crockpot and set it to cook on high for 3-4 hours, or on low for 6 hours.
  4. About 30 minutes before serving, microwave 8 ounces of softened cream cheese with a bit of the remaining chicken broth for 30 seconds to 1 minute. Stir until smooth.
  5. Add the melted cream cheese mixture to the crockpot and stir it into the casserole, ensuring it coats the pierogies and kielbasa evenly. Sprinkle the remaining shredded cheddar cheese on top.
  6. Cover the crockpot and cook for an additional 30 minutes on high, allowing the cheese to melt and the casserole to become bubbly.
  7. Serve your Crockpot Pierogi Casserole, garnished with sliced green onions and a dollop of sour cream if desired.
