Step-by-Step Instructions
  1. Heat 1 tablespoon of avocado or vegetable oil in a large skillet over medium heat. Add the finely chopped onion, sautéing for 2-3 minutes until translucent.
  2. Add the ground beef, breaking it up while cooking for 4-5 minutes until browned. Ensure any excess moisture evaporates.
  3. Stir in the tomato paste and taco seasoning. If dry, add a splash of water or beef broth for desired consistency. Cook for another 3-4 minutes.
  4. Assemble the tacos by placing beef filling and mozzarella cheese on half of each tortilla. Fold and gently press to seal.
  5. Heat 3-4 tablespoons of oil in the skillet and fry the tacos in batches for about 1 minute per side until golden brown.
  6. Transfer fried tacos to a cooling rack and garnish with fresh cilantro. Serve immediately with desired toppings.
