  • 1 cup Buttermilk or milk with vinegar
For the Coating
  • 1 cup All-purpose flour no substitute recommended
  • 1 tablespoon Paprika smoked for deeper flavor
  • 1 teaspoon Garlic powder or fresh garlic, carefully measured
  • 1 teaspoon Onion powder omit for a milder flavor
  • 1/2 teaspoon Cayenne pepper adjust to taste
  • 1 teaspoon Salt sea or kosher salt preferred
  • 2 cups Panko breadcrumbs for crispy texture
For Frying
  • 1 cup Vegetable oil canola or peanut oil works
For the Dipping Sauce
  • 1/2 cup Mayonnaise or Greek yogurt
  • 2 tablespoons Ketchup or barbecue sauce
  • 1 teaspoon Worcestershire sauce optional
  • 1 teaspoon Horseradish optional, substitute with Dijon mustard
  • 1/2 teaspoon Smoked paprika or regular paprika
  • 1/2 teaspoon Garlic powder for sauce

Method
 

Step-by-Step Instructions
  1. Prep Onions: Cut each onion into bite-sized wedges and soak in buttermilk for 10 minutes.
  2. Make Coating: Combine flour, paprika, garlic powder, onion powder, cayenne pepper, and salt in a shallow dish. Pour panko breadcrumbs in another dish.
  3. Coat Onions: Dredge onion wedges in flour mixture, dip back into buttermilk and coat with panko.
  4. Heat Oil: Pour vegetable oil into skillet and heat to 350°F (175°C).
  5. Fry Onions: Add coated onion wedges to the hot oil in batches, frying for 2-3 minutes until golden brown.
  6. Drain: Use a slotted spoon to transfer fried onions to a plate lined with paper towels.
  7. Make Dipping Sauce: Combine mayonnaise, ketchup, Worcestershire sauce, horseradish, smoked paprika, and garlic powder in a bowl and stir well.
  8. Serve: Arrange fried onions on a platter and serve hot with dipping sauce.
