Step-by-Step Instructions
  1. Wash, scrub, and dry the carrots thoroughly. Slice into ¼ inch thick pieces.
  2. In a large skillet, add the olive or avocado oil and heat over medium heat until shimmering.
  3. Add the sliced carrots to the skillet and cover. Cook for 5 minutes without lifting the lid.
  4. Remove the lid, stir the carrots, and cook uncovered for an additional 3 minutes. Add a pinch of sea salt.
  5. Cook for 2 to 3 more minutes until fork-tender and golden-brown.
  6. Transfer to a serving dish and garnish with fresh herbs before serving.
