Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or non-stick spray.
  2. Peel and slice the sweet potatoes into ⅛-inch thick rounds.
  3. Melt butter in a saucepan over medium heat. Whisk in brown sugar, heavy cream, cinnamon, nutmeg, salt, and vanilla until smooth.
  4. Layer the sweet potato rounds in the greased baking dish, overlapping slightly.
  5. Pour the sauce evenly over the layered sweet potatoes.
  6. Cover with aluminum foil and bake for 35 minutes.
  7. Remove foil and continue baking for 20 to 25 minutes until fork-tender and bubbly.
  8. Optional: Sprinkle mini marshmallows on top during the last 5 minutes of baking.
  9. Allow to cool slightly before serving.
