- Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or non-stick spray.
- Peel and slice the sweet potatoes into ⅛-inch thick rounds.
- Melt butter in a saucepan over medium heat. Whisk in brown sugar, heavy cream, cinnamon, nutmeg, salt, and vanilla until smooth.
- Layer the sweet potato rounds in the greased baking dish, overlapping slightly.
- Pour the sauce evenly over the layered sweet potatoes.
- Cover with aluminum foil and bake for 35 minutes.
- Remove foil and continue baking for 20 to 25 minutes until fork-tender and bubbly.
- Optional: Sprinkle mini marshmallows on top during the last 5 minutes of baking.
- Allow to cool slightly before serving.
