Step-by-Step Instructions
  1. Boil 12 ounces of rotini pasta in salted water until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large saucepan, melt 2 tablespoons of butter over medium heat. Add 8 ounces of cream cheese and stir until melted and smooth, about 3-4 minutes.
  3. Stir in 1/2 cup of buffalo sauce and 1/2 cup of ranch dressing. Add 1/2 teaspoon of garlic powder and 1/2 teaspoon of onion powder, stirring until combined.
  4. Fold in 2 cups of cooked shredded chicken and let it simmer on low for about 3 minutes.
  5. Gently fold in the cooked rotini pasta and incorporate 1 cup each of shredded cheddar and mozzarella cheese until melted.
  6. Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish, transfer the pasta mixture, and top with an additional 1/2 cup each of cheddar and mozzarella.
  7. Bake for about 20 minutes or until bubbly and golden on top.
  8. Remove from oven, let cool for a few minutes, and garnish with chopped green onions before serving.
