Step‑by‑Step Instructions
  1. In a heavy-bottomed saucepan, melt 4 tablespoons of butter over medium heat. Once melted, add ½ cup of chopped celery and ⅓ cup of chopped green onions. Sauté the veggies for about 3–4 minutes until they become tender.
  2. Sprinkle in 3 tablespoons of flour and stir continuously for 1 minute until the flour is well incorporated with the vegetables.
  3. Gently warm 2 cups of whole milk in the microwave for about 1 minute, then whisk it into the saucepan along with 1½ cups of heavy whipping cream and 1 tablespoon of tomato paste.
  4. Add 1 teaspoon of Old Bay seasoning, along with salt and pepper to taste. Stir and bring the bisque to a low simmer for about 5–7 minutes.
  5. Gently fold in 8 ounces of cooked shrimp and 8 ounces of crab meat, allowing the seafood to heat through for about 2–3 minutes.
  6. Remove from heat and ladle the bisque into warm bowls. Garnish each serving with freshly chopped parsley or chives.
