Step‑by‑Step Instructions
- In a heavy-bottomed saucepan, melt 4 tablespoons of butter over medium heat. Once melted, add ½ cup of chopped celery and ⅓ cup of chopped green onions. Sauté the veggies for about 3–4 minutes until they become tender.
- Sprinkle in 3 tablespoons of flour and stir continuously for 1 minute until the flour is well incorporated with the vegetables.
- Gently warm 2 cups of whole milk in the microwave for about 1 minute, then whisk it into the saucepan along with 1½ cups of heavy whipping cream and 1 tablespoon of tomato paste.
- Add 1 teaspoon of Old Bay seasoning, along with salt and pepper to taste. Stir and bring the bisque to a low simmer for about 5–7 minutes.
- Gently fold in 8 ounces of cooked shrimp and 8 ounces of crab meat, allowing the seafood to heat through for about 2–3 minutes.
- Remove from heat and ladle the bisque into warm bowls. Garnish each serving with freshly chopped parsley or chives.
