  • 8 ounces mushrooms sliced
  • 2 medium shallots minced
  • 2/3 cup chicken broth low-sodium recommended
  • 1 cup sour cream or Greek yogurt
  • 1 tablespoon cornstarch

  • 1/2 cup roasted red bell peppers optional
  • 1 tablespoon capers optional

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine shrimp with olive oil and Cajun seasoning and let marinate for 15 minutes.
  2. Bring a large pot of salted water to a boil and cook fettuccini pasta for 8-10 minutes until al dente. Drain and reserve pasta water.
  3. Melt butter in a frying pan over medium heat, add mushrooms and shallots, and sauté for 5-7 minutes until tender.
  4. In the same pan, add marinated shrimp and cook for 2-3 minutes on each side until pink and opaque.
  5. Add chicken broth to the pan and bring to a boil, reducing for 3 minutes, then stir in sour cream and cornstarch mixture.
  6. Return the shrimp and vegetables to the pan, stir gently and heat through for 2-3 minutes; season as needed.
  7. Serve the cooked fettuccini topped with the shrimp mixture and enjoy!
