Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Pierce each sweet potato several times with a fork. Bake on a baking sheet for 45-55 minutes until tender.
  2. In a skillet, combine diced apple, cranberries, brown sugar, orange zest, and orange juice. Cook over medium heat for 8-10 minutes until tender and syrupy.
  3. Carefully slice baked sweet potatoes in half and scoop out most of the flesh, leaving about a 1/4-inch border. Mash with butter, maple syrup, cinnamon, and salt until smooth.
  4. Spoon the sweet potato filling back into the skins and top with the apple-cranberry compote.
  5. Return filled sweet potatoes to the oven and bake for 10-15 minutes until warmed through and slightly caramelized on top.
  6. Remove from oven, let cool for a minute, and serve warm.
