- Begin by heating 1 tablespoon of oil or ghee in a frying pan over medium-high heat. Once hot, add the beef in batches and sear for 4-5 minutes until browned on all sides. Transfer the browned beef to your slow cooker, ensuring it’s well distributed.
- In the same pan, add another tablespoon of oil and reduce the heat to medium. Sauté the chopped onions, garlic, and ginger for 2-3 minutes until the onions are translucent and fragrant.
- With the aromatics softened, add in the ground turmeric, coriander, cumin, garam masala, and red chili powder to the pan. Stir these spices for about 1 minute.
- Pour in the beef broth and water, scraping any browned bits off the bottom of the pan. Allow the mixture to simmer for 2 minutes.
- Carefully transfer the sautéed mixture into the slow cooker, layering it over the seared beef. Add the cinnamon stick, bay leaf, chopped cilantro, and a sprinkle of salt. Stir gently to combine all the ingredients.
- Cover your slow cooker and set it to cook on low for 8 hours or high for 4 hours. The beef will become tender and soak up all the spices.
